This is an old recipe that used Uncle Ben’s wild rice. I’ve updated it here. I took it to my work potluck last week and it was a hit. So creamy.
- Wild Rice & Broccoli Casserole
- 2 cups wild rice, cooked (I use Lundberg Wild Blend)
- 1 large head of broccoli
- 2 tins mushroom soup
- 1/2 pound shredded cheddar
- Cook rice and steam broccoli lightly.
- Shred cheese and mix into mushroom soup.
- In a greased casserole dish, layer in the rice, soup mix and broccoli. Depending on the size of dish you use, you could have a few layers.
- Sprinkle with more cheddar or some dried romano or parmesan.
- Bake at 350 degrees Fahrenheit for 30 minutes.
